I make my children smoothies daily and will need to try your recipe.  We use a lot of coconut milk in smoothies, they love it.   We also use cacao powder or nibs.

One of my children's favorite smoothies right now is:  coconut milk or chocolate almond milk, cacao powder, banana, whey protein powder and dark cherries.

 

Actually I am not supposed to eat corn either and I need to keep my carbs low.  Much of these changes are new and it has been really difficult - I have fallen off the GF, DF, corn free, etc...diet lately.  But on the days I follow it, I feel much better so that s/b motivation enough.

Wow, gluten free would be tough w/out corn! It's tough anyway! Cherries sound so yum in the shake. I have some - I'm going to try that today!!

Dh and I went out to dinner last night and he's not home tonight so I think it'll be a quick dinner for the kids and I. Thinking the leftover mushroom stroganoff frm last week that I froze.

 

Grocery shopping is happening this weekend so I've got to make a plan asap lol

We're having the chili cornbread pie from 500 Vegan Recipes. Yesterday's dinner was grilled tempeh and Veganomicon Cesar's Salad.

Tonight was watermelon/arugula/red onion salad with feta, lime juice and balsamic...yummy!  DS ate watermelon and a quesadilla w/ kale, squash and rio zape beans.

Sunday we went to the farmers market and blueberry picking....were LOADED with tomatoes!!!!!

 

Went to my gmas sunday and we had grilled tofu,corn on the cob,sauteed green beans with mushrooms and greek salad

 

Yest was refried black bean tacos


Today was homemade pizza

 

Other things planned:

 

Black bean/salsa soup w dumplings topped with guac

Green onion pancakes w cold spring rolls and possibly lemon egg drop soup

Roasted tomato pasta w zuke and basil

 

Tomorrow is my birthday so not much cooking will be done thumb.gif

Caismommy: Can you post the recipe for lemon egg drop soup? I adore egg drop soup but it's almost always done w/chicken broth.

Tonight is hakubaku organic udon noodles with organic broccoli, mushrooms, cashews, liquid aminos, a bit of coconut oil and some nutritional yeast.  We eat this at least once a week. haha!

 

For smoothies I love raw cacao powder too, I do one everyday with a banana, 2.5 tablespoons raw cacao powder, two tablespoons of nutiva organic hemp protein, and a cup of almond milk (or whatever nut/soy milk you prefer) and a handful of ice cubes. It's really good and lots of iron and protein.

We had the punk rock chickpea gravy from Vegan With A Vengeance over some mashed potatoes (we have a glut of potatoes from our CSA--so I've been trying to use this round up before the next round arrives tomorrow).  Last night I made seitan for the first time (SOOOO easy...I had no clue) and we had bbq seitan sandwiches and tonight I added some of the leftover seitan to my portion of gravy/potato.  

 

Tomorrow the CSA box comes!  So...we'll have fresh farm veggies sauteed over quinoa for dinner :)

Raw cacao powder also has lots of magnesium in it! I'm trying to up my mag to get rid of pregnancy induced restless legs.

 

 

 

Tonight we had a medley of sweet potato, onion, tomato, garbanzos, raisins, buckwheat, cilantro and spices. It was really yummy! And a 1 pot meal!

 

I think I'm going to make lentil soup w/dumplings tomorrow.

 

Friday is my birthday so DH and I are having a rare date night. And on Saturday he is going to cook me a 2nd birthday dinner to celebrate with our daughter - who wants to help him make a cake for me. :-)

Can I just say, sometimes I love faux meat nights ;)  We had CSA potato's, steamed with earth balance and herbs, as well as sweet corn on the cob and field roast frankfurters with sauerkraut and buns.  Yummy!

I have that book in my shelf and never cooked from it so far! shy.gif I really need to pull a cook book out each week and just try some recipes! Thanks for the 'nudge', I'll use that one next! ;)

Love that gravy! I have a lot of potatoes too, I should make it! 

How did you like your Seitan? I've tried it ~3-4x so far and honestly never really liked it.. It was a weird consistency, which I've been told is due to the cooking, but I'm not sure what I do wrong?..  The only way I seem to manage Seitan is when I bake it 'veggeroni' style! innocent.gif

 

*sigh* I've clearly lost my 'mojo' yet again with any kind of meal plans!.. Time to pick myself up again, pick a book and write down a few recipes!..

FitMommy--I thought the seitan was awesome--it was the seitan cutlet recipe from veganomicon and after I cooked it (in the broth in the oven) I sliced it thin and then grilled it a bit before the ritual dousing with bbq sauce ;)  The grilling made the chew of the seitan a little less chewy--which you may prefer to the simply simmered until rubbery thing (of course, I don't mind it being rubbery).  

 

Last night was mexican lasagna--layers of corn tortillas, summer squash, potato, beans and sweet corn with the cupboard enchilada sauce from passionate vegetarian.  It was yummy but could have used more kick (I was cooking for a dinner guest so left out the kick b/c I didn't know if she'd like spicy).  DW made awesome guacamole (we all ate about an avocado's worth each--including our 2 year old!) and chocolate chip cookies for dessert.  

 

Tonight--something with eggplant.  If I get my act together it will be eggplant muffuletta sandwiches.

My house guests aren't coming for a couple more nights. I'm having a really hard time planning meals bc when I get into later pregnancy, all I want to eat is fruit! But I doubt my DH would be down with melon for dinner. LOL. Plus I know I need protein.Anyone have any light and refreshing meal ideas that still have protein? 

 

I never made the lentil soup w/dumplings so I guess I might make it tonight - but tonight is supposed to be the warmest night of the week so it sounds less yummy. Probably stir fry tomorrow.

Ugh, yeah, hot soup on a hot day/night I can't really imagine that either! The hotter the weather, the cooler I prefer my dinner; mostly salad with chickpeas thrown in and a nice slice (or two) of fresh bread.. 

A refreshing meal that still contains protein.. hmm.. I can't think of anything honestly, sorry!.. I'd only say maybe have some beans or baked chickpeas to the side for your protein?

 

I made mashed potatoes tonight and the 'meat balls' from Vegan Vittles, no veggies duck.gifshy.gif

Let's see...clean out the fridge day.

 

Quinoa (cooked in veg broth) with baby bella mushrooms and onions that had been marinated in leftover tempeh-bacon marinade and sauteed/carmelized (YUM)

 

Corn on the cob (fresh from the farm)

 

Baked beans (leftover random beans of various colors and cooked in 'baked bean' sauce)

 

Salad

 

Parboiled roasted potatoes 

 

Veggie burgers (the two random Dr. Praeger ones I had at the back of the freezer; luckily only two of my kids wanted them!)
