healthy freezer meal options...?

Is anyone planning to do freezer meals?

I am considering investing in a freezer since our apartment just has one of those dorm sized refrigerators. We also don't have an oven but we have a toaster oven and a microwave so I am trying to find meals I can reheat in one of the two.. eyesroll.gif

I am also trying to come up with some healthy (lower fat, vegan/vegetarian when possible,) options to freeze which will be good for the summer (soup is easy but not the best when its 100 degrees + out with no AC in our place)

right now my freezer list looks like this:

  • veggie burgers (need to find a few good recipes since you cant buy them pre-made here)
  • lasgana (veggie and a low fat meat)
  • maybe chili (bean and meat)
  • granola bars (need a good low fat, high protein recipe which freezers well)
  • french onion soup
  • tomato soup
  • grilled eggplant casserole
  • polenta lasagna with kale

I found I don't tolerate beans or onions well when BFing so I am trying to avoid those or at least not make them a primary option but am considering some sort of chickpea curries..

Are there any other options people like/enjoy which would freeze well and be sort of 'one handed reheat' meal options for lunch or dinner? I found breakfast to generally not be so much of an issue since I tend to just eat yogurt or cereal and coffee.

I've heard that enchiladas are really good for freezing, but I have no experience with this so I can't give you a recipe.  But I do love enchiladas.

I think there's another freezer meals thread in this DDC which might have some suggestions for you..... Here's a link that I came across (I haven't tried any of the recipes yet, but hope to get around to prepping some meals soon)...

Once I actually get started on some recipes I'll send some your way!  .... Do you have a crockpot?  Looks like the above link has recipes that go from freezer to crockpot as well (which would be an additional time/work saver)....

no crock pot- i usually just cook things on the lowest setting over the oven..

right now my list is:

veggie burgers homemade (need some good recipes)

lasagana
chili?
french onion soup
tomato soup
eggplant parmesan-type casserole
polenta lasagna http://greek.food.com/recipe/polenta-lasagna-with-feta-and-kale-204257
popsicles http://www.skinnytaste.com/2011/06/berry-yogurt-popsicles.html
marinated meats
Sloppy joe (could be made with lentils if you are veggie, we use some meat, but do about 1/3 veggies, 1/3 lentils, and 1/3 meat, all covered in yummy homemade sloppy joe sauce!)
