Camping-friendly Vegan Meals

We just returned from our first camping trip since becoming vegan and I was kind of at a loss in terms of what to prepare. Most of our pre-veg camp meals consisted of various meats & eggs and plenty of "convenience foods". 

 

 

What are your go to camping meals & snacks? 

 

We did seasoned diced potatoes in foil over the fire, corn on the cob, Field Roast sausages, pancakes, veggie kabobs, and I made some cinnamon rolls that we took up with us. Not bad, just not much.

We eat more convenience foods when camping - chili and rice, hot dogs and baked beans, tacos, and spaghetti are our fallback menu for a 4 night trip. Dinner and lunch are both served with a giant bowl of raw veggies and dip. Lunches, we have PBJ, hummus and crackers, soup, and our next trip we're going to try nachos for one meal. Breakfasts are pancakes, oatmeal, soyrizo hash, and muesli.

Our two staples for camping (in our meat days) can still be prepared veg*n.  Spaghetti is one.  Tacos is the other.  


I've been thinking about this too.  Breakfast will be hardest for me.  I used to boil a bunch of eggs and bring yogurt.  I ate an egg and a yogurt each morning.

I love camping food.  We'd cook over the fire and have a small camp stove (like you can cook one small pan of water on) - so anything that just needs heating or boiled water was good to bring.  Before we had the camp stove, we also had a very used camping pan we'd carefully set over the fire too.     

 

We'd often do oatmeal for breakfasts.  Sometimes toast (we inherited someone's campfire 'toaster' once).  Applesauce and granola.  Sometimes I'd make biscotti or some kind of quick bread to have for camping time.    

 

Hummus & chips or pita & raw veggies for first day 'meal'.

Cous cous, or the instant boxed tabouleh or taco tvp (we could also just as easily not use these and take them home).  Add whatever leftover veggies we had to any of these meals.

Canned vegetarian beans or veg chili.

Foil potatoes/onions/carrots with bbq sauce.

 

Pistachios are another fun campfire food (we toss the shells into the fire).
