My good friend recently had a baby and I want to bring them a meal but she is gluten-free. Any ideas on a good meal that can be easily re-heated.

Does she eat meat? chicken cacciatore is always a huge hit at my house:
chicken thighs and drumsticks into deep frying pan, just brown both sides - then take them out, set aside,
into same pan add chopped onion, garlic, mushrooms and black olives, till onions are cooked through
next add 1 - 2 cans crushed tomatos - you can also use jarred sauce in a pinch
add back the chicken and simmer for 30 minutes

Chili - veggie chili or with meat. If you're using canned beans (esp. chili beans with sauce) you'd want to double-check the ingredients there, but otherwise unlikely to be a problem. Good with fresh corn (in lieu of cornbread - or you could easily get a gluten free cornbread mix if you feel so inclined).
Quinoa salad (cold) or pilaf (hot)?
I'm planning on making a quinoa salad tonight. Last night, both kids had friends here at dinner. I grilled a lot of chicken souvlaki and served it with pita, topped with homemade tzatziki and tomato and onion and feta and a tossed salad. Today, I have lots of the chicken left. It's all cubed and can be easily mixed into some cold quinoa with diced veggies (cucumbers, red and orange bell peppers, tomato, red onion or green onion or garlic scapes), baby spinach leaves or arugula, a vinaigrette dressing and some pumpkin or sunflower seeds or toasted sliced almonds. If I have some feta left, I'll crumble it in too.
Im trying this recipe tonight ....
if your friend is vegetarian - consider a lasanga where the pasta is replaced with thinly sliced zucchini or eggplant.

SUGARLESS BANANA OATMEAL COOKIES
3 ripe mashed bananas
2 cups instant oatmeal
1/4 cup soymilk
1/3 melted earth balance or coconut oil
1 tsp. vanilla
1/2 cup raisins (regular or golden)
1 cup nut/seed mix *
Mix and let sit for at least 10 minutes. Spoon into 1-1/2 inch cookie mounds on a greased cookie sheet.
Bake for 10-15 minutes in a 350°F oven.
That's so nice of you to even make the effort to prepare a gluten free meal for your friend!
We are also gluten free, dairy free and have to avoid six additional allergens too.
