Friday, Aug. 10:

Breakfast: oatmeal with berries and 1 tsp of sugar, flour tortilla with eggs with tomatoes and peppers

Lunch: macaroni and cheese, baked beans, green beans, tortilla chips

Supper: tomato and cheese sandwiches, cream cheese and apricot preserve sandwich; ice cream sandwich

 I have been avoiding this thread because I have been really sucking at this challenge.  I did menu plan and go grocery shopping earlier this week so I am gonna share some of the dinners I will be making during the challenge.

Oi!  Must get back to this.  We have been camping this past week and our wee babe is teething, so life has been a mix of traveling, sleeping on the ground and losing more sleep to a crying baby.  I am struggling with exhaustion today.  My food intake will be mediocre today...I am forcing myself to journal my meals so I don't go face down in a cup of coffee with cream and sugar.  I crave sweets when I am this tired.  

 

 

 

Breakfast:  2 waffles, 2 T maple syrup, berries, small smear of butter and tea with almond milk

Lunch:  brown rice, chicken, veggies, apple

Dinner- cereal w/almond milk- too hot to eat anything else

This morning's weigh in was good so for me it looks like Monday might be a good day too.  Just writing down the food seems to help me keep mindful of eating veggies and fruit for example.

 

Saturday, Aug. 11:

Breakfast: waffles, one with butter and maple syrup, one with peanut butter and blueberries, 2 veggie bacon strips, 2 glasses almond milk

Lunch - church potluck - pesto pasta salad with red and yellow peppers and tomatoes and cheese cubes, spinach salad with eggplant and gluten pieces and craisins, egg salad on whole wheat dinner roll, small slice of chocolate cake with scoop of ice cream, watermelon and grapes

Supper: baked potato wedges, Boca chicken burger on slice of bread with tomato, pineapple popsicle

Sunday, August 12:

Breakfast: one breakfast burrito with eggs, tomatoes, yellow and green peppers fried in coconut oil, grapes (had upset stomach before I started and didn't eat the second burrito I had fixed, gave it to my DH and he had 3 burritos total)

Lunch: "snacks" at a baby shower because my tummy still wasn't feeling good - 2 vegetarian meatballs with BBQ sauce, 4 ritz crackers, 4 cubes of cheese, handful of grapes, blueberries, and raspberries, chocolate cake square, 2 cups of punch

Supper: bowl of oatmeal with grapes at 4 p.m. when I got home from the shower; bowl of pesto pasta salad with peppers, tomatoes and cheese chunks at 7:30 p.m. followed by tortilla chips with sour cream and salsa

Yesterday-    Too hot to be in the house so we took a drive up the coast. Not a great eating day and spent a lot of time in traffic. At least we had air conditioning.

                   

                   Breakfast:  blueberry scone and chai from Starbucks

 

                   Sort of lunch- stopped at a gas station and got 1 small bag of potato chips and an orange juice. Only took a few sips of that. Yuck! 

                   My dh bought me a small bag of M&M's. bag.gif

 

                   Dinner-  grilled seitan sandwich with ranch dressing.

 

Lots of water   

 

 

Today- grilled seitan sandwich with ranch dressing

           fruit smoothie- fruit, almond milk, and ice

Breakfast: oatmeal with blueberries, 2 slices of toast with peanut butter, one with apricot preserves

Lunch: left over pesto pasta salad with tomatoes and peppers

Supper: 1.5 black bean burritos with cheese, sour cream, and salsa, ice cream sandwich

Dental appointment this morning and heat wave continuing.

    

Tuesday

Breakfast- nothing

 

Lunch- fruit smoothie w/almond milk and bowl of ramen soup

 

Snack/drinks- lemonade, Gatorade, lots of water

Tuesday morning was a great weighin that I hope to repeat next Monday, but I think my eating yesterday did not contribute to continued loss for me.

 

Tuesday: Aug. 14

Breakfast: oatmeal with grapes (so much better than raisins and just as sweet), two slices of toast with peanut butter

Lunch: 2 small yukon gold potatoes, cottage cheese, vegetarian baked beans, mango popsicle

Supper: school staff bbq: cheese potatoes, vegetarian baked beans, spicy black bean burger with bun, slice of colby jack cheese and tomato, dollop of pistachio pudding salad, home made ice cream, 2 cookies, and watermelon. I suppressed the urge to drink pop!

Hmmm, my birthday this week and I am a bit embarrassed to post my eatings.  Lets just say that there has been cake.  Several pieces of cake.

Been so busy the last couple of days that I haven't had much time even to open up MDC.

 

So back to today: Saturday, Aug. 18

 

Breakfast: oatmeal with a bit of butter, bit of brown sugar, cup of mixed berries, cup of almond milk, bit of banana,

Lunch: 2 fat free vegetarian refried beans in burritos with cheese, salsa, and green peppers, bowl of Special K cereal with almond milk and raspberries (resisting the urge to eat sweet sugary cookies)

Supper: ice cream, tator tots with ketchup, cottage cheese

Just got back from a trip to see my family.  I'll start up new today. Did eat some junk during the 7 hour drive.

 

Breakfast- Fritos and 2 nutrition bars  

 

Snack- banana walnut bread and a chai from Starbucks.

 

Lunch- Leftover mu-shu vegetables and rice, water

Ugh, I didn't write down Sunday or Monday's food.  Well onto yesterday's food.  Why was I craving salty things at 6 a.m.?  I don't know.  Anyway Tuesday started off badly.

 

Tuesday, August 21:

Breakfast: potato chips and sour cream, peanut butter and apricot preserves sandwich

Lunch: veggie turkey sandwich with miracle whip, potato chips, blueberry yogurt, grapes

supper: rice with cream of mushroom soup, broccoli, boca chick'n meatless burger, ice cream with raspberries

afternoon snack: grapes, raspberry yogurt and potato chips

supper: 3 slices whole wheat bread with tomato paste covered in homemade black beans, yogurt, grapes

Thursday, Aug. 23:

 

Breakfast: oatmeal with blueberries and 2 vegetarian sausage like links

Lunch: 2 eggie turkey sandwiches with miracle whip, potato chips, blueberry yogurt, and a banana

snack: banana, fresh from the garden tomato sandwich (one with cheese, one without, just one slice of bread each), one slice of bread with cheese and miracle whip

Supper: boiled potatoes with Earth Balance "buttery spread",  vegetarian baked beans, cottage cheese, broccoli, yogurt

snack: Culvers peanut butter and chocolate frozen custard with raspberries
