vegetarian stuffed pepper recipe

I have a lot of green and purple bell peppers from the garden.  I am looking for a good and easy stuffed pepper recipe. (I've found some online, but a 'tried-and-true' recipe suggestion w/b great.)

I've made these peppers stuffed with white beans & couscous quite a bit - my kids even like them.  I haven't done them in the slow cooker - just using the alternate directions instead.  They're excellent as leftovers too (you can do stuff like, say, set on a bed of lettuce and have an instant main meal salad).

 

 

I have never tried this similar-sounding variation, but it looks even tastier IMO and would be great for using garden cherry tomatoes and squash if you have those too.

Thank you.  I will try those recipes since I will have more peppers.

I ended up using this recipe - with a few variations.  http://www.tasteofhome.com/Recipes/Vegetarian-Stuffed-Peppers

I just cooked them in the oven - we like the peppers firm and not mushy.

I left out the cheese and the corn and used a blend of rices instead of plain brown rice.

My children loved them; my husband ate them but didn't like them too much.  (He says he likes everything...but I could tell when he doesn't really like something!)
