Salmon Potato Casserole I made last night...

We are out of money for groceries but still have a full pantry so this is what I threw together last night:

 

A casserole made of red cabbage, garlic, wild salmon (from the can), purple potatoes, mayonnaise, Ezekial flax cereal, dill, kelp flakes, apple cider vinegar, and a little of the water the potatoes boiled in.

Everyone loved it. 

If I could do it over again I would maybe add an egg to help hold it together a little better.

 

First I tore up some cabbage and put in the bottom of the casserole dish.  Then I boiled some small potatoes, and cut them after they were boiled and used a dumpling draining spoon to fish them out and put them on top of the cabbage.  Then I made a salmon-mayonnaise-dill mixture and spooned that on top.  Then I added a tiny bit of extra leftover tomato sauce, some apple vinegar, and the fibery flax cereal on top.  To make sure it didn't get too crunchy or dry I spooned olive oil and potato water on top.  Baked it for about 30 minutes (I think) at 350.

 

The cabbage was $2, the salmon can was $3, etc. so it was a dinner under $10.

It was pretty yummy, and felt wholesome.  We accidently left a little out on the table and even the cat liked it! :0
