How to make granola from soaked grains/nuts?

I'm new to soaking grains. I just tried it last night, so I have soaking: oatmeal, sunflower seeds, pumpkin seeds, sesame and flax seeds. I usually just made this granola with the seeds raw and toasted them in the oven but just started reading about how I should be soaking them. So, after I soak them for 12-24 hours, do I dry them or rinse them or can I just drain the water, throw together with my spices and honey and bake as I normally do in order to make granola?

Really, no one knows anything about this? I started reading a traditional foods cookbook, which also is giving me a lot of info about preparing foods in general and I just learned that granola is like the worst thing you could eat for digestion, wow, I had no idea! I love granola and thought it was one of the best foods I could eat! So, I thought if I soaked it first, I would be making it easier to digest. The last batch I made, I soaked it overnight, then drained it, then baked in the oven for like 1.5 hours, it still was soggy. It was oatmeal and a bunch of different kinds of seeds and raisins. So, I'm just eating it heated with milk, more like regular oatmeal. I was trying to make a "granola" that was crispy that I could eat cold with almond milk, but it didn't work out. Would I need a dehydrator for that? In order to soak my grains/nuts, but then make them completely dried out again or am I crazy and don't know what I'm doing? orngbiggrin.gif

pretty sure there is a ton of info on soaked granola, I have done it myself (gosh, seven years ago when I was on these boards every day it was all over the place lol) and used my oven at its lowest temp, I'm sure a dehydrator would do a better job. I know that Nourishing Traditions has info on this. Look for recipes for Crispy Nuts from Nourishing Traditions, it does exactly what you are trying to do - you soak the nuts, drain, and dehydrate til crispy. Yes you can do it with your oatmeal and any nut although I think cashews are steam treated and therefore have no active enzymes anymore.There have been a lot of people since then looking into the best ways to reduce phytates in grains and legumes, lots of them were members here.
