Here are a few in addition to the good ideas above.
Red lentil soup with spinach and lemon - really easy and good
Veg pasta e fagioli soup. I have had this bookmarked to try for a while - looks so good and easy. Just skip the macaroni and parmesan, or sub rice noodles and nutritional yeast.
Another one I've been meaning to try - Honey-baked lentils:
Sweet potato-black bean enchiladas. I make this quicker by using prepared green salsa for the sauce. If you don't have time to bake, just heat corn tortillas and use this as taco filling.
Sweet chili lime tofu. I simplify by serving with plain rice or quinoa & using any greens I have available. I usually omit the mint, too. It's really the sauce that makes the dish.
Crock pot - veg chili! My favorite is Rae's Vegetarian Chili from Allrecipes.com
