I'm a teacher at an international school in China. Our elementary school was declared a nut-free zone to protect some very allergic students. Next week I'm planning to do a baking activity with a class. Problem: I'd like to make a zucchini cake because some children got inspired by the zucchinis in the school garden. However, all the recipes I have found so far contain nuts. Does everybody have experience with substituting nuts in baking recipes?
