I'm having a difficult time locating a vegan stuffed peppers  recipe. Please share your favorite or provide a link. Many thanks!!

I haven't tried this recipe out yet but I hope to soon. You could use the vegan mozzarella in place of the real thing here, I plan on using a "cheese" sauce recipe I have though.

I don't really use a recipe. I do make a mexican style pepper with chili rice,black beans,corn and salsa that my kids like. I found recipes seemed to long so I just use leftovers and stuff peppers with them yummy.gif

I just made stuffed peppers a week ago - millet, black beans, stewed italian style tomatoes - delish :-)
