I haven't made a complete list yet, but for a start:
Spiced nuts
Candied orange peel
Gingerbread cookies
Lace cookies
Shortbread
And always, a Buche de Noel for dessert after Christmas dinner.
I'm thinking that I need a couple of bars, perhaps one with cranberry and another date/fruit/nut, and maybe some biscotti. I also just realized that there is no chocolate on that list, other than the Buche de Noel.
I must live in the capitol of the shortbread-baking universe. I have searched far and wide for rice flour and superfine sugar. DH even went to the next town over. The market shelves have been empty. I finally found some rice flour (not my usual brand, so I'm kinda antsy about it) but there is no superfine sugar to be had anywhere. I'll have to make do with regular granulated. Serves me right for procrastinating.
How is everyone's baking progressing?
I was late with it and only started last week. So far

- dark fruitcake
Making the fruitcake was a 2-day affair, taking up much of the weekend in between the search for rice flour and sugar and a couple of social events. It's almost too late for it but I hope it should be ready by Epiphany.
Saturday we baked Russian teacakes and snickerdoodles. I wanted to do more, but this year has been crazy.
