Cooking with sprouted buckwheat flour

I just bought some on a whim, but don't really know how to use it.

 

I saw that Cheeseslave posted a recipe using it with rice flour (which I also bought) to make pancakes; can I use these two ingredients to substitute for wheat in recipes, especially baking ones?

yes you can. 

 

that's what i use for pancake flour too. though recently i got some gluten free flour mix since it was on sale. 

 

in our house i love buckwheat flour, dd hates buckwheat. so i add a bit of buckwheat in stuff i make - even cookies. crepes.

 

i have never made anything purely out of buckwheat flour. its too strong. but when the recipe calls for wheat germ i've used bw flour instead. 

 

just experiment. with everything. meaning if it calls for regular flour mix in half cup buckwheat flour.
