Allergic to lots and in a recipe rut - need new ideas!

Thread Starter

My 3 year old DD is allergic to dairy, eggs, gluten, soy, and peanuts and my little DS is allergic to dairy, soy, peanuts, and most everything else in the legume family (meaning I am not eating those things since I am EBFing him).  My DH is gluten intolerant.  I NEEEEEEEED new ideas for lunches and dinners.  We are fine eating GF oatmeal and GF 8 grain cereal most mornings, but the lunch and dinner boredom is killing me.  Thoughts?

-Stir-fry with rice, veggies, & meat or shrimp
-Corn tortillas with sauteed veggies, fish, salsa
-Stuffed peppers http://www.moosewoodcooks.com/2011/10/quinoa-stuffed-peppers/ (minus cheese)
-Roasted chicken with potatoes, sweet potatoes, carrots, onions (we do this in one pan, veggies under the chicken)
-Soup
-Burgers with veggies (hold the buns)
-Quinoa risotto http://kblog.lunchboxbunch.com/2010/08/almond-coconut-quinoa-risotto-saffron.html
-Irish nachos http://whatsgabycooking.com/irish-nachos/ (skip the cheese)
-Curried veggies with rice
-Mushroom pizzas http://ohsheglows.com/2010/08/31/mushroom-masters-a-tournament-of-taste/

We do lots & lots of salads here, lunch is almost always leftovers or salad.

Most paleo recipes would meet your needs, check out some paleo blogs. smile.gif Indian recipes might work too, esp. if you can do lentils.
