I thought it would be fun to start a thread to share meals that made us happy. Simple, healthy or whatever worked for you.
Today was chilly - and I made a good brocolli & russet potato soup. It was thick and hearty - but still healthy.
1 onion sauteed, salth pepper
added 4 cups broth and a cup of water
added 1 large russet potato cubed
1 carrot diced
simmered 12 mins
added 2 broccoli florets - chopped
simmered 12 mins
used immersion blender to partially blend, then sprinkled a little bit of cheddar in
it was warm, good and made me happy today.
