I'd also recommend the bean balls - they're so easy and delicious. People have always ended up loving them.
I've done this recipe for beef macaroni with the pre-made veggie 'fake meat'. And I'll say it works out very well - partly because you've got the macaroni and the corn in there with it and it's a highly seasoned dish anyway. I suspect it would also turn out well with the lentils-as-fake-meat recipes out there (this lentil taco filling looks pretty good, probably because of the enchilada sauce) - there are other versions that are lentils & rice together, even for your crockpot, and that you can freeze. I'd look around for one you think would be liked best (I can't recommend a specific one since we don't eat a lot of lentils anymore d/t allergies. . . but there's a lot of yummy looking ones and they're easy).
Depending on your crowd, I've also had good luck using the hash brown patties as a pseudo-burger sub (lots of veggie and yummy toppings with it), makes a good almost-reuben too with swiss and sauerkraut.
