What do you like to do with leftover/rotisserie chicken?

We make chicken salad, soup, enchiladas.  Just looking for new ideas!

Add it to - 

 

- pasta (with pesto, diced tomato, feta cheese, toasted pine nuts) 

- risotto (with mushrooms, red/orange/yellow peppers, peas or chopped asparagus, shredded basil, grated parmesan cheese) 

- casseroles like Chicken Divan (with rice, broccoli and cheese) 

- chicken pot pie 

- fried rice

- paella

- chicken and sausage gumbo

- burrito filling (along with roasted sweet potato and corn)

- wraps - with rice or quinoa, chunked tomato and cucumber, tzatziki sauce

- panini sandwiches 

- ramen soup (discard the packaged flavouring, boil chicken stock and add the noodles to steep, then add julienned carrot, red pepper, broccoli, and add shredded cooked chicken, top with cilantro, green onion and chopped peanuts or toasted sesame seeds, flavour with a splash of soy sauce and sesame oil)

MY "go to" when I have chicken leftovers is what I call "Vidar-salad". Vidar is the name of a good friend, who gave me this recipe. thumb.gif

 

I shred the chicken, and gently heat it a little bit. The I put it in a salad of lettuce, red bell pepper, cucumber, tomatoes and sugar snaps. If I have leftover pasta or rice, I can put that  in the

salad, too. But the best part about this is the dressing. I LOVE this dressing:

 

0,5 cup mayo (If you have made a BIG salad, then use 1 whole cup, and double everything else in the dressing, too.)

2 t mustard, preferably a sweet and (a little bit) spicy kind

1 t currypowder

The juice of half a lime

 

Whisk everything together, and mix this with the salad.

Tonight I put leftover chicken in an African curry soup with loads of veggies.  It's smelling good!

That sounds delicious. I am making beef stew for dinner. As I was searching for my recipe I came across my recipe for African Peanut Chicken Soup and thought I should add it to the list I posted above. You were way ahead of me!

I make hash with potatoes, green peppers, onion, garlic and carrots and throw in the cooked chicken near the end
I usually make homemade gravy with homemade chicken stock to pour over it.

Also bbq chicken pizza, chicken paninis, throw it in with pasts and Alfredo sauce, chicken and noodles with the frozen egg noodles. I'm making Pioneer Woman's chicken spaghetti next week (making my own "cream of" soups with homemade stock for it).

Oh I also make sesame noodles with sesame oil, soy sauce and rice vinegar and add cooked chicken to that. I think I'll add that to our menu soon.

Just wanted to come back and say thanks! Also wanted to post the African stew recipe because 3 of the 4 of us loved it.  The fourth was an under the weather four year old, so....

Didn't have bell pepper or jalapeno but did add kale, cubed butternut squash and carrots.  Also took other reviewers suggestions by tripling the curry, adding cumin and cinnamon, and lots of lime at the end was essential.  Also garnished with peanuts.

ooooh that sounds awesome, thanks! I love adding chicken to vegan recipes. (Sorry vegans! :p ) A lot of soups that include meat are weak on the veggies, and vegan recipes tend to make more effort to include a variety of veggies and flavors.

Soup, nice and hearty with lots of veg
Casserole
Stir fry
Old fashioned, what's the name, chicken sandwich with gravy over it.
Pot pie
Fried spring rolls

I always make broth with the leftover bones.

 

Chicken tacos or burritos

BBQ sandwiches

chicken curry

chicken stirfry

orange chicken

chicken & apple or chicken & pear turnovers

 

Those are my go-to meals with leftover chicken.
