What to do with turkey meat?

I have 2 big turkeys in the freezer, and I`m looking for good recipes.

We are just 2 persons in the house, me and my 11 YO son. So when I defrost it and cook it, there will be LOTS of leftovers. What do you usually do with leftover turkey meat?

I chop it and freeze it in 1 cup increments.  Then I can use it however I want.  But some of the stuff I use it for include soup and homemade "hot pockets".  Before we were dairy free I would make turkey tetrazzini (which also can freeze well).

I do that too! When I pack mine to freeze I use a solid sided container. I pack it in there right then use broth to fill in all the gaps. It lasts better that way, IMO. Great to have on hand or soups, enchiladas, etc!
