I'm bringing a postpartum meal for some vegan friends who are also gluten-free and yeast-free. I am thinking about a nice salad with a vinaigrette, white beans stewed with tomatoes and italian herbs, garlic, and onion. I'd usually serve it to my family with gluten free corn bread, but my recipe has eggs and milk. I know I can sub coconut milk, but not sure how it would work with egg substitute, as it's made with coconut flour.
Does anyone have a great recipe for vegan cornbread?
I thought I'd also make a batch of muffins, so any delicious vegan muffin recipes are welcome as well.
