Sweet smelling stools and possible yeast and gluten issues?

My son has been a fussy baby since birth (no kidding). He has had stomach issues and was a very gassy baby and never slept well. And I don't mean sleeping through the night because obviously that is not realistic. He just wakes all night even at 2 1/2, his legs pulled up to his tummy. He has what his dentist thinks looks like acid reflux damage on 2 of his molars but he was never diagnosed with reflux, although it would make sense. 

And now, going on 2 months he has had oral thrush on and off, a mild case nonetheless. His stools are rarely "solid" and for a while now they smell sweet, as does his bum even sometimes when he hasn't pooped. Sometimes even my stools smell the same and I am wondering what it could be. I have pretty bad dairy allergies and have since I was a baby, I still eat some dairy though. My son has never been allergy tested but he also snores at night and has allergies. I am just thinking he HAS to have some sort of allergy or intolerance. We won't have health insurance for another 4 months so I think it's time for an elimination diet.

What I am wondering is what could be causing his poo and mine sometimes, to smell sweet? yeast? allergies?celiac? Should I eliminate one thing for a month and then another? or dairy and gluten at once? I think I read that celiac can sometimes be genetic and I have never been tested. I would love some advice, thanks!

He snores all night? This probably isn't feasible until you have insurance but I think he needs a sleep study. He could have apnea and that could cause the waking. There is a link between apnea and reflux as well. Snoring is indicative. It may be due to allergies/swelling. ENT might be able to sort that out. I think working on an elimination diet might be helpful. Is he nursing still?

Sweet smelling stools here have been bacterial but I'm sure the causes can vary. Metametrix comprehensive stool can find anything living but it's pricey particularly without insurance.
