Well, I'm not sure how big of a list you want, but here are the high points of what I eat daily:
- My breakfast is usually toast with pastured butter and 2 pastured fried eggs, and a glass of raw whole milk. Sometimes I make scrambled eggs with goat cheese and have that on toast. I don't often need a snack before lunch (I'm not nauseous otherwise I'd snack more) if I have two eggs and a whole slice of toast.
- Lunch is anything from peanut butter toast, yogurt, cheese, leftovers, smoked salmon and crackers, a couple spoonfuls of PB
Snacks - nuts, spoonful of peanut butter, yogurt, cheese, glass of milk
- dinner - I have a big rotation of favorite recipes I regularly make. We don't have a lot of starch at dinner, but occasionally have rice or potatoes. I've cooked half as much these last few weeks as I normally do. The other night, we had cheese tortellini from safeway with pesto sauce, and I added chicken that I sauted and sliced, plus peas and pine nuts and parmesan. It was decent.
I haven't been huge into fruit very much, but I do really enjoy slicing an apple and eating it with Tillamook cheddar cheese.
Right now, my snack at almost 10:30 pm is organic blue corn tortilla chips dipped in a mixture of cream cheese and red pepper relish, and a glass of milk. Soooo good.
