how to make Coconut-milk yogurt at home with probiotics- anyone?

I'd really like to be able to make coconut milk yogurt for my son who used to love yogurt but had to go dairy free. He misses cheese and yogurt most of all and is always asking for yogurt.

 

I am having a hard time finding out how exactly to make coconut milk yogurt- I live abroad and can't find any dairy-free starters here (though LOTS of coconut milk!) so was thinking I could use probiotics but don't know what kind to use or how exactly to go about it. 

Anyone done this?

Love to see what gets posted bc coconut yogurt is so damn expensive in the stores around here that I never buy it even though I love it and we too are dairy free.

I keep trying to remember to try smile.gif the one from cultures for health. My kids don't like yogurt but I do. I just can't afford the non-dairy stuff.

Here's the actual cashew cheese recipe. I made it in a blender.: 

Cashew Cheese:

§3/4 cups cashews, soaked overnight, drained

§1 clove garlic

§1 teaspoon lemon juice

§pinch Himalayan Salt and pepper

1. Place all ingredients in food processor. Pulse until a cottage cheese texture is achieved. Add a little water if necessary.
