marinating chicken question

I am trying to come up with a way my very picky and meat averse son will eat meat. I am researching ideas to marinate for really low fat meats like chicken breast. All of them call for olive oil and I try to avoid that for high heat type cooking/baking.

Can I use a stable fat for marinades? I am avoiding dairy with him but could use ghee/clarified butter...except it's not a liquid. I'm guessing the liquid nature of olive oil is important.

I don't have a perfect answer for you.  Here at Mark's Daily Apple he does a breakdown of edible oils.  It looks like avocado oil might be your best bet.  Or if you're marinading at a warm room temp then coconut oil might work.
