Good idea with the meat as the wrap. I had thought of doing the lettuce or cabbage wrap but worry that it'll get wilty before I get to eat it (I pack a bag of quick things to eat since I don't actually get a break to sit down and eat.)

 

Those bacon & egg cups sound good! I need to make some of those since my BF never has time to eat breakfast. Would you just keep them in the fridge and pop them in the microwave to heat up?

I think so. I've never made them before.

Day 2 of paleo and I feel great.I'm eating so many more fruits and veggies than I had been.

Yesterday - breakfast: 2 egg whites with onions, peppers, and tomatoes, a banana, and iced coffee with coconut milk and a little agave
Lunch - chicken breast and sweet potato with coconut oil
Snacks/dessert -fruit and almonds
Dinner-mushrooms stuffed with spinach, onions, red peppers, and sausage, brussel sprouts and broccoli

Today- breakfast- paleo pancakes (2 eggs blended with one banana) topped with ghee, some pineapple and strawberries, iced coffee
Lunch -chicken breast, broccoli, tomatoes sauteed with lemon pepper seasoning
Dinner- crock pot chicken tikka masala over cauliflower rice
Snacks/dessert -fruit and almonds

I tried those egg muffins only once before but they did not taste good, maybe the recipe was not so good?! We also don't own a microwave so I can't heat them up quickly...

 

Taryn - Any reason you're skipping the yolks? These are were all the vitamins and nutrition is (especially folate).

 

OK I'm getting more and more motivated. Two days of eating well. I made bone broth and have been drinking some every day.  Yesterday I FINALLY worked out and now I am a bit sore. At least the back pain is gone. I still feel tired though.. ah well.  I need to survive the weekend, it's our house warming party and I'm pretty sure people will be bringing lots of dessert bag.gif

For the lettuce wraps, I pack my filling separately from my leaves an just put it together right before I eat it.

Lily - I just prefer the taste of egg whites if is an omelet. I don't like when the white and yolk are mixed. Weird, I know. I'll eat them if the egg is fried or hard boiled. Today I used the yolks in this: http://paleoparents.com/featured/guest-post-the-urban-poser-berries-cream-breakfast-cake/

Taryn - not so weird, I actually have to make sure that the white and yolk are completely blended otherwise I find it a bit gross if there are streaks of white and yellow in there innocent.gif.

Oh, and the cake looks delicious yummy.gif! I'm pinning this to make this weekend, it's strawberry/cherry season here. MiL already called to say the cherry tree is brimming so we'll have a few buckets to get rid of!

 

I'm starting to feel better. And I discovered an awesome feature on our new oven: I can put the stuff in, tell it how long it needs to cook and when it needs to get done (oven has a safety feature that turns it off when temp is too high). This has helped me tremendously in the last few days to cook better. I'll prepare the food while DD naps and put it in then forget about it. We can then go out when she's up and food is ready once we're back home

So I'm 17 weeks and have lost 3 or 4 pounds in 6 days of paleo. That puts my weight gain at 4 pounds total for this pregnancy, which my preggo app says is normal. I started this one fifty pounds overweight, just into the obese BMI category :-( So I should be fine if I lose a bit, right? I'm eating whenever I am hungry and choosing healthy options including lots of fruit, veggies, nuts, meat, and good fats.  I feel great.  As long as its safe for the baby I would love to lose a bit of weight but I am not trying to.  I am just trying to be healthier.  Thoughts?

Just me, but I think that if this weight loss is the result of healthy changes to your diet (which it sounds like it is) then you should have nothing to worry about as long as you're meeting your nutritional requirements (which I don't see how you can't when you eat whole, natural foods.) If you were restricting calories or only eating "diet" or "light" or "fat-free" foods and/or highly processed food, then I'd worry about weight loss. I have still yet to gain any weight at 16 weeks but I also started out overweight (gained 25 lbs in the 6 months prior to getting pregnant.) I have just been trying to make healthy food choices and figure that everything is balancing out from the excess I'm carrying around.

 

My first step toward a more Paleo diet has been trying to cut out grains. I've been having really bad reflux lately and bread seems to make it worse so yesterday I was completely bread-free, although I did eat oatmeal for breakfast. Dairy will be my next step. I've never been a big milk drinker but lately I've been eating cheese everyday. And I use regular half & half in my morning coffee.

When I was pregnant with DD2 I had gestational diabetes and lost weight on a low carb diet. I didn't gain anything after 28 weeks, even lost a few lbs and DD was HUGE and healthy. My midwife said that its fine to lose weight while pregnant as long as you aren't hungry.

Asked my midwife the other day and she said doing paleo while pregnant is fine. And she's actually doing it now too :-) glad I didn't have to explain what it is.

Now I just need to find a good restaurant option for date night on Monday. We haven't been out in a month and I need a date night. I wanted to do Thai but the restaurant we like is closed on Mondays.
