Paleo -what's for breakfast?

I always like to mix it up and get fresh ideas. Today we had German omelets. Pork sausage, onions, spinach scrambled into eggs.

I don't have any information to share but I saw your post and wanted to bump it up for attention. Hopefully someone will have something to share that will be of help.

I like to start my mornings by frying up some bacon, frying some eggs over easy, putting the eggs over half of a sliced avocado and crumbling bacon on top.

Yesterday was sweet potato bake with cinnamon apple compote. Today was egg "pancakes", sausage and potatoes. Tomorrow will be sweet potato hash browns, ham steak, and an egg.

My typical mid morning breakfast/lunch, if I do not have leftovers from dinner, is two sunny side up eggs over a pile of wilted spinach and topped with sliced half avocado and tomato or fresh salsa, sometimes with a couple pieces of sausage on the side (though I usually eat the sausage first thing in the morning when I heat some up for the kids).

 

I love making sweet potato hash, but usually save that for the weekends. Mmmm, maybe I'll make some tomorrow with bacon in it. So good!
