My Cheesy Broccoli Rice Recipe

I got tired of seeing recipes using cans of condensed soup and cheese whiz *shudder* so here's my method:

Cook 3 cups of rice. (2 cups water, 1 cup rice)
Chop 1 head of broccoli into small pieces including a little stalk but mostly using florets. Nuke the broccoli with a tad of water for 2 minutes in a glass bowl.
Chop 1 small onion.
Chop 2 celery stalks (including tops if you wish).
While the rice is cooking, preheat your oven to 350 and find a baking pan to put everything in. I use a big shallow corningware pan. Spray it with Pam or whatever.
In a large-ish pot melt a half a stick of butter on medium heat and simmer the onions and celery. When the veggies are mostly cooked, whisk in a 1/4 cup of flour.
Whisk in 2 cups of vegetable broth and a 1/2 cup cream or half'n'half. Stir Constantly. While you're stirring reach up in your spice rack and use a sprinkling of (whatever you have, no need to buy special things here) salt, pepper, garlic, dry mustard, curry, herbs de provence, chives.
When the mixture starts to bubble turn off your burner and add 2 cups shredded cheese (Colby, cheddar, Mexican blend, etc) and stir well.
Stir in your rice and broccoli into the cheese sauce then pour it into your baking pan. Feel free to top with breadcrumbs and/or shredded cheese.
Cook in the oven for 45 minutes.

If you're using frozen broccoli there's no reason to precook it.

I usually serve this with a rotisserie chicken and a salad, but it stands alone as a meatless meal.
