Cooking vegetarian with an enamel coated cast iron casserole pot

I was recently gifted a 3 qt enamel coated cast iron cooking pot (has a lid, much smaller than a dutch oven but a good size for two adults or sides for the whole fam)... I have never cooked with one! Does anyone use these sorts of pots or dutch ovens for vegetarian cooking? I would love some ideas or cookbook recommendations! :)

Yeah, I do, all the time. They are good pots, I cook soups, grains and sauces in them. What did you want to know?

I love mine.  It's great for risotto, or soup, or stew, with or without meat.  It's a good pot, the enamel coating is a lot more durable then teflon.  It is heavy, but I don't find that a problem.
