Can I still eat these potatoes?

So yesterday I peeled and cubed a bunch of potatoes for a recipe, but dh didn't end up coming home in time for dinner so I didn't make it.  By the time I was going to put them away they had brown/black all over them.  I remembered that I had read somewhere that you could cover cut potatoes in water and put them in the fridge to keep them fresh, so I did that.  Today they still look brown/black even after having sat in water in the fridge.  Are they still safe to cook and eat?  Or should I start over?

They shoud be fine. It is just discoloration from oxygen exposure. I would just rinse them off real good.

I wouldn't, potatoes go bad very quickly. Normally I just trust my nose and can tell if things are bad by the smell, but potatoes are notoriously terrible for food poisoning (that what goes bad in potato salad, not the mayo)

Next time, put the water over them right after you peel them. Cover them completely. My grandmother would do this up to 24 hours in advance, and leave them sitting out, but covered.

 

Once they've turned brown, it's too late.

They are fine to eat. It's just oxygenation.
