I need ideas for afternoon/evening meals

Ok so I am new to meal planning and I need some pointers. Actually I need inspiration. I'm the kind of person who likes cooking but not routine. 

 

My kids really like cooking so for the long weekend (Friday through Sunday) we're not planning specifics. But for Monday through Thursday, we have quite a fixed schedule afternoon/evening and it would help to be organised.

 

We're looking at a situation all of those days where they need to have something reasonably substantial when out and about on each of those days, around 5. We're then going to have to have a crockpot supper at around 8 when we get home. Much as I hate to say it, it WOULD be easier to have a plan of what to have each day, partly because then anyone could load up the crockpot i the morning. Its a big change for us in many ways as we're usually more about cooking together and eating together. We do have a crockpot though.

 

We are vegetarian and I'd say I'd prioritise nutrition over economy really, including making stuff that tastes good so the kids actually eat it! 

 

We have a breadmaker and do make our own bread. I'm up for doing some baking at the weekend, but baking isn't my thing so clear instructions would help. 

 

Please share your thoughts, websites, ideas, anything! I'm really after maybe 4 tried and tested recipes to start off with, to add to those I use frequently. Stuff that is good, basic food that doesn't get old.

 

(btw wasn't sure exactly where to post this-if its wrong, mods would you move it? :-) )

 

Just ETA. We don't have a car most days so the food I'm taking out and about needs to be portable.

I have a filling mix that works really well for both tacos and enchiladas. I've even tried it in quesadillas. I don't know how portable it is, but it's tasty! Of the three, the quesadillas would be the most portable.

 

Saute some onion in the oil of your choice. I use coconut. Add some corn, either frozen or fresh. you could also add sweet pepper. add southwest/adobo/ other seasoning of your choice. Let everything mingle and caramelize.  Add a drained can of beans, or prepared beans.  I like black beans, but what ever you like works. Mix it all up. As soon as the beans warm, remove from heat.

 

For tacos, just use as filling and top as desired. For enchiladas, use as filling, add cheese, and top with sauce of your choice. bake until bubbly.

 

 

ETA: totally forgot. I often add quinoa to the mix, too. But I often forget, much to the annoyance of husband.
