I'm having this problem too! It's a bummer because I quit my job and I love cooking so I was excited to spend all this time in the kitchen making yummy meals for my husband and I. I'm a vegetarian, so my quick go to meals are black bean tacos (black beans, chopped onions, corn, cilantro, lime juice, cumin and chili pepper) with guacamole, pizza (using frozen pizza crust...maybe your kids could help with the toppings), brown rice pasta with beans and veggies, veggie burgers and grilled veggies (I make my husband do the actual grilling). Sometimes I don't even have interest in the meals I mentioned, so I end up ordering Vietnamese or Mediterranean takeout! Everything seems better lately when someone else cooks it.
Well then I ate half a bagel leftover from breakfast, poured myself a glass of milk and then ate chocolate chip cookies in milk.
Salad was just not appealing.
So my poor son had plain chickpeas (which he likes) and a cookie for lunch.
Thankful for my mom who dropped off homemade tabbouleh salad, Cole slaw and big tub of.chicken corn soup leftover from a party she catered this weekend.
So you just need to get other people to bring food for.your Family for a couple weeks.
this is the soup I made last night
1 bag of trader joe's frozen mixed vegetables
1 lb of lean stew meat
1 qt of beef stock
1/2 tbspoon each of thyme and oregano
equal parts diced onion, carrot and celery to equal about 3/4-1 cup
~1 cup barley
sear the beef, then throw in the onion, carrot, and celery and saute until softened
add broth, bring to the boil, add your spices. you can simmer with or without the vegetables added
but I threw mine in at about this time and put the dutch oven in the oven. about 15 minutes before serving I added
about a cup of barley and sriracha.
lentil soup is also ridiculously easy with little actual attention needed.
