What to eliminate first?

I don't feel well, and I'm certain it's due to my diet.  About 2 years ago I was dieting and exercising and got down to around 145, which was a 50 pound weight loss.  I felt fantastic. My dieting started with  just counting calories, and I ate a lot of processed calorie-controlled food (lowfat yogurt, special K bars, lean cuisine entrees, etc).  I plateaued in the 160s, then started losing again when I started juicing fruits and veggies.  I typically would juice 3-4 times a day and eat one meal a day.  I toyed with vegan eating, but don't feel like that's anything I want to do long-term.

 

Fast forward to now....I have gained back all 50 pounds in the last year.  I got tired of "dieting" and just quit.  The weight doesn't even bother me that much, I just feel terrible.  I take zoloft for premenstrual dysphoric disorder.  I am often just so tired.  Every couple months I go through 2-4 days of being so exhausted I dont want to move, having headaches and all over body aches. I have many bowel movements in a day, and often I urgently have to go.  

 

I think I need some sort of elimination diet to see what exactly my problem is.  Dairy?  Coffee?  Caffeine?  Meat? Gluten?  Where do I start?  I dont drink milk, but do use cheese, butter, and flavored coffee creamer.  I drink 2-5 cups of coffee a day.  Other that that I only drink water, We regularly eat meat, and I don't really feel like that's the problem.  I love my carbs and I suspect that's really the issue.  Would you recommend cutting out one thing at a time for a few weeks and see if symptoms improve, or cut out everything, like a fruit/veggie fast, then add one thing at a time back in and see if symptoms return?

I highly recommend paleo/ primal. I tried it a few years ago and it got rid of every minor health problem I had, so now it's a lifestyle the whole family follows. It really just involves cutting out processed foods, grains, sugar and legumes, but there is no feeling of having to miss out on anything, because the food is so good and satisfying.
