Beans + tomatoes (acid) - yes or no?

This recipe looks great for a few Xmas gifts. My question is about the cooking instructions. It says to add tomatoes to the beans, then simmer, but I thought acid made the beans hard or made them not soften. Is this going to work?

It slows down the cook time only. The more acidity, the more longer the cook time. It could be that she found that the amount of tomatoes (just 14 oz) didn't affect the recipe too much. If in doubt, add the tomatoes towards the end. I would, as I like my beans extra soft and creamy.

Thanks! That's what I was thinking as well.

Hmmm. Now looking at the recipe and instructions again, is that enough boiling time for dried kidney beans? I know there is a toxin in kidney beans, and they need to be boiled properly. Not sure a minute or two cuts it?
