Looking for wheat-free roll out cookie recipes

Not just wheat free, but they must have:

 

No almond or nut flours

No teff flour

Minimal rice flours (dd is mildly allergic, we limit)

Minimal tapioca flour

No dairy, though I can substitute butter easily enough

No xanthum gum or similar additives

 

These are OK:
 

Eggs

Oats

Corn flour

Sugar

 

Hoping for gingerbread dough (sturdy enough for a house?) but someone in another thread mentioned sugar cookies, and those would be fun, too.

 

I'd also want to minimize the ultra-fine zero-nutrient ingredients like tapioca and potato starch.   I realize these might be necessary to make the dough rollable and crisp, but the recipes I'm finding are mainly rice flour/potato starch/tapioca starch and that sounds a might scary.  I mean, these don't need to be bastions of nutrition and health, but something less thoroughly refined would be nice.
