Moving from zone 1A to 6B. Wow, I can have perennials!

We are moving from a relatively arctic area to a much more moderate climate in about 2 months.  Ohh... just in time for planting season!

Mind you we are not moving to a very large piece of land- only about 2 acres, and a good deal of it is currently wooded.  With that in mind, I am looking for some garden ideas.  I would like herbs right out my kitchen door, and vegetables as well, but I am looking for relatively easy care plants.  I have 4 kids, and my husband is away for work more than he is home. I can manage to eke out planting and harvesting but not hours a day in the garden every day.

rosemary and chives are pretty child resistant as is thyme... you could plant mint but it has to be in a pot or it takes over everything.
