I'm currently knitting a ball from the book "Knitting for Baby" by Melanie Falick and Kristin NIcholas. It is mostly baby clothes patterns, but has a ball and a teddy bear, both of which are easy (especially the ball..... it's becoming my standard baby-toy-gift!)
I think that Debbie Bliss has a soft-toy knitting book, but I haven't tried any of her patterns.
A really great book is "The Children's Year" by Cooper (plus others). This one has a number of knitting projects among other toymakings. I just knit a bunch of little chickens that have buttons for bases... very cute! The patterns are for kids to do, so they are very easy...
There is also "Toymaking with Children" which I think focused more on soft-toys in it's first edition. I don't have it (yet) but from what I hear it's kind of a classic.
The place where I've seen the most soft-toymaking books for sale is used book-stores! I think that it used to be a lot more popular, and so nowadays the right people are cleaning their bookshelves or something!
