Bean bags are always easy-you can use different fabrics for different textures-terry, flannel, velvet, etc. You can also use different beans, popcorn, lentils for different sounds and add some herbs if you want scents. Make them in different shapes and sizes-we have lots!
Stuffed animals are easy and fast too-snakes, turtles, bears, fish are easy shapes.
Homemade playdough is great too though don't have a recipe off hand...
You can make some shakers with any container that has a lid or closes-tape it shut securely with some type of beads/beans inside and they love noisemakers-even if you don't. They can color/decorate the outide with stickers, etc.
Fabric books-get different fabrics and sew some simple shapes/pics on the pages-sew the binding and he has is own book.
You can do this too if you can laminate the pages-customize his own book with favorite pics of things or family photos-punch 2 holes in binding and tie with a ribbon.
I know there are lots more that escape me at the moment but here's a start.
