Bread recipes with special flours

Hello.... any bread-making mums out there??
I've been trying to bake my own bread at home, with mixed results. I would like to try to make bread with some special flours, other than just plain, or whole-wheat, like spelt, teff, etc. Would appreciate any input, tips, advice, recipes, cookbooks, etc....

Homemade breads

We like to add some whole or coarsly ground flax seed to our bread.

We also used to soak whole wheat kernals over night and then add to the bread.

We use a little soy flour sometimes. It smells a little like popcorn when it is baking.

Sometimes use some oatmeal or barley flour in the bread.

All ideas but no real recipe. I like to experiment. Once you have made the original recipe a time or two you have an idea what the consistency should be and just add what works.

Sweeten with molasses gives a different taste.

I throw in a little Itilian seasoning, it gives the bread a real gormet smell when it bakes.

I always blow bread up when I substitue grains.
