What is the best way to sew together soaker parts to have a flat seam?

The soaker in a diaper or a knit soaker??

:LOL I just wasn't sure. I'm not an expert at all, as in I'm working on project 3. but I just took the end/tail of the yarn, put it through a tapestry needle and sewed up the loops on the end of the worked piece. If that makes sense anyway

Is this a soaker knit flat that you are trying to put together? Then mattress stitch gives flat invisible seams. Don't have an online diagram for it--I have a book with good pictures. But, you could try searching mattress stitch, and see if you can find a nice example online. Or does someone else have good online instructions?
