My Kombucha Experiment

Ok, first, this is kinda embarassing... but here is the deal:

I got my Scoby mushroom and set it to a brewing some Kombucha tea. It sat for exactly 7 days. I will say, I only used about 2 quarts of tea, as I didn't want to tax the mushroom, as it was kinda smallish.

At day 7, I poured the 'tea' into some great bottles (the kind with a porcelin lid and rubber stopper, with metal 'band' that swings down to seal it really well)....then with the tiny amount left over, I poured a glass and some over the 'original baby' and the new, very large flat mushroom. No funny looking stuff, everything appeared to be just fine and dandy.

Then I tasted the stuff...well, I have bad childhood memories of having to gargle with apple cider vinegar in warm water (we had sore throats alot, lived in a crappy, badly insulated house, but that's another story)...

Anyway, it tasted just like 'apple cider vinegar', without the apple and only slightly of the tea still. It wasn't super strong, and it wasn't all that unpleasant, however, I could not drink more than a tiny drink of it. It reminded me of the 'Bragg's' drink, spoon of honey, spoon of vinegar, and add to water.

I guess the little baby shroom did it's job, and then some, as far as fermenting it well. If I happened to like apple cider vinegar for drinking, it would be great!

WELL, in a moment of passion, I erm...'composted' the shrooms, and sat staring at my two newly 'corked' bottles of 'tea cider vinegar'....not sure what to do.... :

Of course, then I read about someone putting strawberries in the brew to make it taste like wine...mmm, that sounded nice, and I started feeling REALLY guilty about 'tossing' the Scoby without thinking more about it! I also had this gallon of tea made, sweetened, and ready to go. SO.....

I poured a bottle and a half of the newly brewed 'Kombucha vinegar' into the gallon of tea (in one of those wide mouth glass jars from Anchor Hawking)....it's been 4 days now, and guess what....there is a NEW Scoby mushroom growing just as well as you please....and it all appears just fine and dandy.
I guess there was enough 'innoculant and culture' in the bottled stuff, to allow a new shroom to grow!

I will let it go maybe only 6 days this time, and try it again....

I thought I would share this 'experiment', as it intrigued me [In the Fact that an entire new mushroom grew from just the innoculant!!]. I'm still not sure about drinking it if it EVEN tastes like vinegar still.

PLEASE, whomever did the strawberry thing, if you read this, PLEASE let me know your brewing recipe, as I don't want to be tempted to toss it again!

Far out! I'm not the strawberry person but I did make some chai kombucha once that didn't taste very apple cidery. I've found the length of time is related a bit to how warm it is where the brew is sitting. Also if you put in more sugar you get more of a soft drink type of flavour.

That sounds fun
Anytime I've ever had it, it has always had a apple cider vinegar type taste to me. Even when I buy it.
