Thanks!! I stuck them in the fridge after reading these. I think you are right because they did start to get a little wilty sitting out.
I had 3 colors, purple, white, and green. I cut them in thick slices, dressed with olive oil and sea salt, and broiled for a few minutes on each side. I served them topped with sauteed red kale (sauteed in a little olive oil and plenty of garlic), black pepper, and chunks of goat cheese. Oh my goodness....sooooo yummy.
