Anything written by Thich Nhat Hanh is great. Very comprehensible.

The Thirty-Seven Practices of the Boddhisattvas - oral teaching by Geshe Sonam Rinchen and translated & edited by Ruth Sonam. Great complementary text to the original oral teaching.

by David Darling is an amazing book. It's out of print, so may be a bit difficult to find. It's worth the search though.

A great resource for people of all faiths, this book explains concisely and exhaustively what "Christian" means:

Mere Christianity by C. S. Lewis

Another good book is a summation of interviews by a Palestinian Arab who is a Professor of Philosophy at the American University in Beirut, Lebanon, Isa Ben Adam. The book is called A Refutation of Moral Relativism: Interviews with an Absolutist and the author's name is Peter Kreeft.

Rawana Moon's whole site is full of useful information on how to begin in the Norvicensian Tradition. This is a great site, with a year full of tasks to complete and think about, personal stories, and articles to peruse and think about. It was my personal jumping off site almost 4 years ago.

- my current favorite site blending the two paths. I tend to have better luck reading books (Christian books, or pagan books, not too many that blend both!) but this one has tons of resources, and also another how-to-start-on-this-path page. A very tasteful, well put together page.
