I buy it sometimes, I'm not sure what the difference might be in the actual sugar, if it holds any residues or not, but it's one less place adding pesticides to the environment I figure. Scrape it with a fork or put it in a big plastic bag and bang it on the counter until it breaks up
Tips for softening. A piece of bread (you can use the heel of a piece of bread) or an apple in the container. Iknow it sounds weird - but it works. Big tip though - put the bread on the bottom under the sugar - less likely to have bread crumbs in the sugar.
The only reason organic sugar is any better is that it isen't as processed and it's grown without pesticides. Rapadura still has some of the nutrients of the sugar cane left. But it should still be used in moderation -sugar is sugar.
