Blended Salads/Raw Vegan Soups

This is a great way to get loads of green veggies into you and your young children, who would not normally be able to just chow on a big bowl of salad. Another great reason to eat these is that the blender does a much better job than a human can do to chew the raw vegetables, and thus makes the nutrients much more assimilateable. The basic idea behind this is a "salad in a blender".

Put a cup of water in your blender.
Add a handful of greens (I like to use lettuce and kale)
Have a celery stick handy, and pulse the blender using the celery stick to stomp down the greens
After the greens are somewhat chopped, add the celery stick and a carrot, chopped into blender manageable pieces, along with a garlic clove and maybe some other veggies that sound interesting-broccoli, cucumber, etc.
Add a slosh of vinegar, some raw extra virgin olive oil, a little bit of evaporated cane juice (to take the bite off), sea or earth salt, and pepper to season, and give it a whirl until it's processed to your liking. Some people like it really smooth, other people like it with a bit more texture.

Adjust the seasoning to your liking. I like it with lots of vinegar. It's also nice to use lemon juice instead.

Yah we do this alot in our house too.

We will do the blend salad for bases in litely cooked soup, we will add ground walnuts, sunseeds, sesame seeds, pinenuts, brazil nuts etc to make it thicker and use it for sauces for soba noodles and spreads for crackers and toast.

We will also add lots of different spices and oils, a fav. of mine currently is sesame oil, miso, and different seaweeds.

mmm, not sure how I missed this post, but sounds yummy!

I have vitamix directions for making 'instant' raw soup. It's tasty, but I used carrots, celery, garlic and water...then added some tomatoes at the end. I like your idea to use greens! Yum!

Kinda like your own quickie V-8?

My mom made these a lot when I was a kid and I LOVED them! I'll be doing it for my kids but DH thinks it's one of the grossest things he's ever heard of so he won't be having any. Thanks for reminding me about them!
