Looking for Eggless Dairyless Cake

I'm looking for an eggless dairyless cake for dd's birthday party tomorrow. Everything I find online has odd instructions or ingredients that cost a fortune to buy. Does anyone have any tried & true recipes that consists of normal household items? Thanks!

you can make any cake eggless and dairy free by using soy milk instead of milk, coconut oil instead of butter, and 2 tbsp soy powder for each egg

PM StephandOwen...her son is allergic to dairy, egg, and corn...and he just had a birthday and a very yummy cake (I was there, so I know the cake was yummy. )

Have you looked up any vegan recipes? There are tons of recipes for vegan cakes out there - the only "wierd" ingredient that I know if that they would have would be an egg replacer - Ener-G makes a good one and it's only a few dollars for a box that lasts for years but you probably need to get it from a health food store or Whole Foods.

Applesauce Cake

1 cup margarine
2 cups brown sugar
2 cups applesauce
3 1/2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt

Cream shortening and sugar. Sift flour and spices. Add flour mixture and applesauce alternately. Pour into 9x13 pan. Bake at 375 for 35-40 minutes, or until inserted toothpick comes out clean.

I usually use this icing, but I don't know if you could use it, because of the cream cheese...

Cream Cheese Icing

2 Tbsp soft margarine
2 3oz packages cream cheese
2 1/2 - 3 cups powdered sugar
1/2 tsp vanilla

Here's another eggless cake, after you read the ingredients, you'll see where it got the name (but I assure you, it's delicious!)

Crazy Cake

3 cups flour
2 cups sugar
2 tsp baking soda
1 tsp salt
4 heaping Tbsp Cocoa powder
2 tsp vanilla
2 Tbsp vinegar
2/3 cup oil
2 cups water

Mix everything together. Bake for 35-45 minutes at 350 degrees in an ungreased 9x13 pan.

Again, I ususally use the cream cheese icing on this (it's my kids favorite!) but anything would be great.

THis is similar to the chocolate cake above but a bit more cocoa powder so it is more chocolaty. I make this and it always is well received. I don't usually even tell anyone it is dairyless. It is from a cookbook from a gourmet restaurant in California. I melt chocolate chips (many are dairyless) w/ some non-hydrogenated shortening (just a little) and spread it on top. My dh says that it reminds him of the Hostess cupcakes.

Amazon Chocolate Cake
3 c flour
2/3 c unsweetened cocoa
2 tsp baking soda
2 c sugar
1 tsp salt
2 c cold water
1/2 c plus 2 TBS oil
1 TBS vanilla
2 TBS white vinegar or strained lemon juice

mix together flour, cocoa, baking soda, sugar, and salt. Sift. In a separate bowl mix water, oil, vanilla, and vinegar or lemon juice. Wisk together wet and dry mixtures. (Recipe says to pour through a strainer to remove all lumps, but I don't do this). Pour into 2 greased round cake pans or one greased 9x13x2 inch pan. Tap edge of pan against counter or drop six inches to floor to pop air bubbles (I do this, it is fun ). Bake 350 degrees for 25-30 minutes. Super yummy!

I made one for Connor's first b.day that was really tasty and it was dairy, egg and soy free. Actually I made him a large cupcake and he wanted more! Let me see if I can find the recipe.

google crazy or wacky cake. I make them all the time and nothing ever turns out as good as these. I dont' have the exact recipe I use right now, if someone else doesn't post it I will later

Wacky cake is my go-to from scratch cake. As long as you measure everything correctly and don't mix it to death, it's very hard to mess up.

I always double the amount of cocoa and add some chocolate chips to give it a little more chocolate flavor.

In a thread in the allergy forum (stickied at top... allergy free meals or something like that) there is a post with substitutions on how to make wacky cakes in flavors other than chocolate.

Yes I've made a lemon or orange type, with grated zest, and the juice. I bake mostly vegan always

I'll also recommend the crazy or wacky cake...or as it'd listed in my Joy of Cooking, Vegan Chocolate cake. Super easy to make, super chocolatey and yummy!

you can also make the crazy cake with a "pudding" that is dairy and egg free. You put it on top before baking and it sinks to the bottom

I didn't want it to be chocolate so I just added extra flour. It turned out AWESOME. I haven't had "real" cake in a long time but dh said it tasted just like regular home made cake. It had the right texture and everything.

just made some wacky cake for the first time for my vegan cousin, and no-one in my family believed it was vegan, given how rich, chocolately and yummy it is. it's totally delicious and is now my #1 dessert recipe.
