This thanksgiving I think I'll buy one of those Tofurkey feasts because we are going to my husbands very un-vegan friendly parent's house for dinner. The feast comes with a Tofurkey roast, stuffing, gravy, and cranberry dumplings, and all you have to do is heat it up (perfect for when you are a guest in someone else's house). I'll probably offer to make mashed potatoes, candied yams and a pie. That way we can have those things too and they'll never know the difference anyways.
I found these great vegan marshmellows at the store. They are fat, fluffy and light. I took them camping and completely gorged on them they were so good. I finally was able to have vegan s'mores! At halloween I used them to make rice crispy treats, and they came out perfect! They were just the right chewy texture.
Speaking of thanksgiving, I would just like to add something that I am thankful for: All of the great new vegan foods!! When I was a kid, there werent all of these wonderful vegan options like Tofurkeys and vegan marshmellows. I was raised on brown rice with seaweed cooked into it, huge pots of beans (called 'cajun style' when my single dad burned them), vegetables, fruits and walnuts from our trees. Healthy, sure, but not very exiting! Now I can whip up a vegan pumpkin pie minus the tofu by using ener-g egg replacer, I can make vegan s'mores for my vegan daughter and neices and nephews, I can give them delicious vegan ice cream, the list is endless! Just thought I'd add that. I'm always so grateful for all of the new choices I have!
