Vegan Soup recipe?

A family in our playgroup just had a baby and we are taking them dinner tomorrow night. They put out a request for vegan soup and salad. We are not vegan and I'm having trouble thinking of a soup! Any good recipes out there?

why don't you try mulligatawny? this is my recipe--i'm pretty sure it's vegan

i don't have exact measurements (might be risky since you need it for tonight)--this is pretty much how i do it

saute chopped onions (1), carrots (1) and celery (2) in soy margarine (few Tbs)

add flour (couple Tbs) & a little curry powder (2 tsp), cook for a few minutes (makes a roux)

add veg stock (2 pints) and simmer for a while (15 minutes)

then add some cooked basmati rice, salt, pepper, thyme, simmer again

right before you serve, add hot coconut milk (1/2 cup)

Tuscaroran Ogwissimanabo

Ingredients

§1 TBSP olive oil
§1 medium yellow squash – diced
§4 shallots – chopped
§4 cups vegetable stock or water
§3 TBSP maple syrup (the real stuff)
§1 cucumber – seeded, chopped
§1 TBSP salt
§1 TSP pepper


Directions

Drizzle oil on the bottom of pot and sauté squash & shallots for 3-5 minutes.

Add the stock and maple syrup to the pot.

Simmer for 40 minutes or until soft.

Add cucumber and simmer for another five minutes.

Transfer soup to a blender or food processor.

Blend until smooth.

Season with salt and pepper.

I might be coming in too late here but I'll tell you how I make mine (just so happens to be vegan):

Take some olive oil and heat, add onion, potatoes, garlic, carrots, celery, and anything else you want to put in (like kale, corn, tomatoes, whatever is handy and would taste yummy in soup) Tofu is a great addition to soup, put it in here if you like.

Saute veggies for a bit. Add enough veggie stock to cover. Simmer, add salt, pepper, and other soup spices (bay leaf and thyme are my faves). If you want richer flavor try adding brewer's yeast (a couple TBS or 1/4 cup to start with depending on how much soup you are making).

If you are really ambitious and want to make a richer, heartier soup you can make your own stock and puree the stock veggies (or really, any cooked veggies would work) and add to soup. Puree potatoes to thicken if you like.

I also like putting some pasta in. Uh-oh, this is making me hungry...

It's good with a crusty bread.

Yum, yum! I'm printing these up! I couldn't get back to the boards, so I ended up improving with tons of veggies and tomato juice. Add a little sea salt and it was a pretty darn good basic soup. I think I'll puree the leftovers and thin it to make stock and try out some of these recipes. Our next night to bring them dinner is Sunday. Hmmm, now I've got to decide. . . (I just can't stay away from this smilie!)
