He's made a bird feeder our of a pinecone so far.
I haven't done this yet, but I'm going to have my 2 1/2 year old make snowflakes to hang in the window. I'm going to glue 3 popsicle sticks together by crossing them at the center for the base. Then, I'm going to have a box of white buttons and he can glue those on.
Next year, when he's a bit older, I'm going to have him swirl paint in those clear glass ornaments.

So far we have decorated a gingerbread menorah (SIL sent this for St. Nicholas Day; we are neither Jewish or Catholic). We have been to the local shop where you buy a piece of bisque, paint it there, and leave it to be fired -- 5yo made a Christmas plate for herself, 9yo worked on gifts for others. We've also been making Christmas cards -- 3 white circles glued on blue background, decorated in snowman-ish attire.
I have paper to make window rosettes and stars this year. I also have some ideas for felting some ornaments and decorations.
Last year we strung beads on pipecleaners to make ornaments. Another time we used the metal ends off of frozen juice; we put these on a wooden block and punched holes in them with a hammer and nail, following a pattern (simple stuff like a fir tree, a bell, etc.). These became tree ornaments. We've made ornaments out of clay by using cookie cutters. We've also cut gingerbread men out of cardboard and decorated with puffy paint (if you drop wet puffy painted gingerbread men face down on the dining room chairs it will stain the fabric...just a little tip). Dd stuck pinecones in tiny little terra cotta pots and decorated them with paint, glitter, beads (put clay in the pots to weigh them down and moosh the pine cones in).
Really, anymore my kids are pretty much self-starters on craft stuff. They'll suddenly start getting out fabric, beads, cardboard boxes, paper, etc. and announce that they're putting on a play, making gifts, or whatever.

we made candy canes out of pipe cleaners and beads.
we also made beeswax ornaments, but that's more of an adult craft
we put together a gingerbread house.

Good ideas! Thanks mamas. We made a ginger bread house but it didn't work as well as our house last year. Oh well. It was still fun. We have also made home made Christmas cards which was a lot of fun. This week we are going use some suggestions here and from elsewhere and also bake a little.
