help w/ dinner ideas while I'm sick?

I have been sick with a cold for almost a week and do not feel like making dinner for my family. My husband is very understanding - but I want to have healthy meals for my boys to eat.

Do any of you have any quick and easy dinner ideas that are healthy and vegetarian (we eat dairy and eggs)? BTW - DH is not a soup fan - which is a real bummer as they are so easy to put together on the stovetop or slowcooker.

TIA for your help and ideas!

Well, soup was going to be my first suggestion, but . . .
Does your dh like stew or chili? Those are quick&easy in the slow cooker.
Does your family eat eggs? Scrambled eggs or omelets or quiche are quick healthy meals - add some cheese if your family eats dairy.

Pasta (baked) is good and easy too. IF you eat dairy, you can combine uncooked pasta, 1 jar sauce, 1 jar water, ricotta and mozarella cheese and bake for an hour or so until pasta is done. Add spinach, brocolli, onions, etc before baking if you want to. HTH

This sounds yummy. DH husband LOVES pasta - and it will be easy to make. Do you think I could leave out the ricotta? (I don't have any in the fridge.)

I've never made the above, specifically, but it does sound good! I used to make (ovo-lacto) vegetarian lasagna and substituted cottage cheese for ricotta. It was good! I had to drain off the liquid from the cottage cheese first, and that helped make it more like ricotta. Also, I used to substitute lightly steamed cabbage leaves for the noodles. Sounds wierd, but it's actually really good.

I'm sorry to hear you have a cold and feel so yucky still! You need to eat some garlicy or spicy stuff to help clear you out Maybe stir fry? I know it's not the easiest, but perhaps DH could pre chop the veges?

I make a thick lentil stew. I boil about a cup of lentils and add in any root veges on hand and add in favorite spices (cumin, garilc, onion, sea salt) and let it simmer on low all day. It gets really thick and yummy! It's good with eggplant and squash in it too.

Thanks xenabyte for the ideas and the encouragement. I'm so frustrated that I can't shake this cold! :

I'll try the spicy/ hot foods idea. Lentil stew sounds yummy and hearty.

I made the baked pasta dish last night (w/ spinach) and it was yummy - even w/o the ricotta. (However, I added too much water so it was a little runny until it cooled and set up.)

My sister also just told me that I should be taking lots of Vit A and C and that ginger root boiled in water and then cooled is great for the immune system. So, now I'll add those to my already lengthy natural remedies list.

I'm sure I'll be better soon - I just can't believe how this is clinging to me. (OK I'll stop whining now!) Thanks for listening.
