i just spent the morning making applesauce with the apples from our backyard. very easy and then I froze it in meal-sized portions -- I am not into canning.
do a web search for applesauce and some kind of recipe should come up. i am at work and my better homes and garden cookbook (which I followed with a little less sugar) is at home.
also -- maybe an apple cake?
high sugar content in this recipe (below). I basically take fresh apples, slice em and boil them for 2 minutes. then follow the recipe below. Apple pie filling is SUPER surgary, but when you just use cooked apples and a little less sugar it still comes out ok.
1 (21-ounce) can apple fruit filling
6 (8-inch) flour tortillas
1 teaspoon ground cinnamon
1/3 cup butter or margarine
1/2 cup sugar
1/2 cup firmly packed light brown sugar
1/2 cup water
* Spoon fruit filling evenly down center of each tortilla; sprinkle evenly with cinnamon. Roll up, and place, seam side down, in a lightly greased 2-quart baking dish.
* Bring butter and next 3 ingredients to a boil in a medium saucepan; reduce heat, and simmer, stirring constantly, 3 minutes. Pour over enchiladas; let stand 30 minutes.
* Bake at 350 degrees for 20 minutes.
Yield: 4 to 6 servings
