Did the extended version on the DVD do a better job? I have it but still have to watch it... hoping that's the case!
Nope, the extended ROTK doesn't have Aragorn and Arwen's wedding--the kiss at the coronation is all we get. Fair enough too IMO, it would have dragged out an already rather cluttered third act.

There is a bit of extra Faramir-and-Eowyn stuff in the extended DVD, but it's kinda... odd. It's like a mini-music video during which Faramir mostly stares creepily at Eowyn from a distance. I didn't like it.

As far as the movies go, I'd say they portrayed Sam and Rosie's relationship most faithfully--the few little hints about her, but never really mentioned until Mt Doom--I guess it worked well for time, but it also happened to coincide delightfully with Tolkien's way of talking about the relationship, so that's good. It's a pity that we didn't get to see some of the lovely post-Quest banter between Sam and Rosie, but that would have required the Scouring sequence, and--well, don't get me started. I do like Sarah McLeod, I thought she played a lovely Rosie.

And although Liv Tyler annoys me like few things can, I did like the sequence between her and Elrond in TTT where he talked about foreseeing Aragorn's death. A lot of that dialogue was verbatim LOTR appendix, and he said it so well... beautiful!

I was so invested in Aragorn and Arwen's story that I really DID want to see the wedding even though it would've made the movie longer! That and the cleansing of the shire should've been added to the movie!

And I agree on the F/E montage. It kinda gave you a little more insight into their relationship but not much! I was disappointed!

I agree. I did like the part from the appendixes.

I won't get you started on the scouring, if you get started then I'll start ranting and the thread will be OT and we'll both be in trouble.

I just don't find Aragorn and Arwyn all that romantic, horribly sad yes, but not romantic.

IMO highlighting happy bits of Aragorn and Arwyn would just make it seem MORE sad.

Sorry. :
